Well, it was really interesting reading everyone's take. I wish I had more time to go indepth (but I should actually do some work).

So, here are ones that are really OOC to me: Draco/Harry, Draco/Hermione, Snape/Hermione.

Ones that work really well: Parvati/Padma, Hermione/Harry, Ginny/Luna, Snape/Draco (slave-boy).

I used to think Snape/Harry was insanely ooc. However, after OotP, I still find it unlikely, but not impossible.

There is my 2 cents. :)
